Black Bean Quesadillas

I am always on the look out for great vegetarian recipes to help keep the budget down. My mother-in-law gave me this recipe and I have to say that my husband loved it. It was so easy to make and you should have all the ingredients you need already in your pantry.

All you should need to add to these is a small salad or some veggies to finish it off.

Black Bean Quesadillas

1 can black beans, drained
1 Tablespoon sour cream
1 Tablespoon salsa
1 clove garlic
1/2 Tablespoon red onion
1/2 teaspoon salt
1/4 teaspoon cumin
1/2 teaspoon lemon juice
1 Tablespoon water
3/4 cup shredded cheddar
1/2 avocado

1.) Combine all ingredients except for cheese and avocado in a food processor and blend.
2.) Place mixture onto 3 tortillas and top with avocado and cheese. Fold in half and grill on a skillet at medium high just until warmed and browned.

I ran across a fun blog yesterday called 100 Days of Real Food. The blog is run by a mother who along with her husband and 2 children decided to challenge themselves to eat nothing but real, unprocessed food for 100 days. They have finished up their first 100 days and are working on a second round.

This website is full of great recipes and ideas for how to eat real, whole, unprocessed foods. You can even download 4 complete meal plans, one for each season of the year. There are also sections for eating out, budgeting, and getting your children on board. You should check it out.

In fact, they have issued a 10 day real food challenge for anyone who wants to sign up. I think I may have to sign up myself. Even though I try to eat healthy, real foods it is tempting to buy the healtheir version of a processed food when I am short on time.

Let's Try This Again

I can not believe it has been 10 months since I last posted anything on this blog. I am really hoping that I can get things going again. Hopefully there are still a few of you who are interested.

I think I should let you know a little about what has been going on in my life this last year. For starters my dad had a massive stroke 2 years ago this Thanksgiving. It left him completely paralized on his left side and totally dependent on someone to help him with everything. It has taken my family some time to help him adjust, but we finally have things somewhat figured out. It is still a daily stuggle, but my family is amazing and has worked together to help my mom figure out how to deal with things. In fact, she has just finished up adding a room to the back of her house so that dad can finally get a real shower and have a private place to sleep and live that is not the living room.

About 18 months ago my husband was laid off from his job and has finally found a full time job starting soon. Praise the Lord. In the last 6 months we have also sold our house and moved. Add on top of that starting to homeschool my 1st grader along with a 3 year old and an 18 month old.

You can say that things have been a bit crazy. I have to give God the glory for sustaining us above and beyond what we ever could have imagined. Throughout the last 18 months of Roger's job hunt he has managed to find several part time jobs that have made enough money to keep us going. In fact, more then just floating. My hard working man along with a frugal lifestyle has allowed us to pay off 1 student loan in full, pay off numerous medical debts, and put some in savings. I am not saying that some months did not get a little lean, but God brought us through it all.

I am planning to try and revive this blog as time allows. I have had to learn in the last year that I run this blog, the blog does not run me. I have had to learn to prioritize and set a schedule. I can not tell you how important a schedule is. I do not feel like I am worried that I will not have time for something because I know there is a scheduled time for it during each day. Hopefully with this new found knowledge I can make this blog a success.

Less is More: Lessons in Getting out of Debt

This is story of my life right now: working full time (and part time on weekends) and trying to pay off a pretty huge sum of debt. My husband and I have paid over $15,000 in the past year. We don't want to make minimum payments and stay in debt our whole life. We want to pay off the rest within another year. To do this we have had to get a little crazy.

I want to share with you a few practical ways we have been saving money so we can get out of debt fast! But before I get to specifics, I want to explain that pinching pennies is not my highest goal. My over-arching goal is to honor God by living responsibly, sustainably, and ethically. To use one example, much of the coffee in our stores is sold cheaply at the expense of poor farmers who work essentially as slaves in South America and Africa. When we buy dirt cheap coffee we are perpetuating a host of injustices. I want to spend as little as possible, but I don't want to cut corners by buying products whose low price is built on the back of another human being's suffering and poverty.

So my husband and I are trying to learn the stories behind our purchases. We are watching documentaries environment, the food system, and Walmart. Reading books about farming and how animals are turned into food. I want to live in a way that doesn't treat people, animals, and resources as disposable, as cheap and easy ways for me to get what I want with as little cost or effort as possible. Sometimes this means spending a little more on certain products, but we make up for it by buying less stuff overall.

So here are some ways that we save money (and try to live simply and sustainably!):

1. Buy less meat. We keep our grocery budget low by not buying meat (my husband likes lunch meat for lunches, so I buy that for him even though I am convinced that the meat industry in our country is really bad). This also helps the environment, but that’s a topic for another day!

2. Eat beans and other legumes for protein. This is a corollary of the above! Beans, lentils, and chickpeas are packed with protein, fiber, and B vitamins. The best and cheapest way to use beans is to buy them dry (in bulk if possible) and soak them overnight before cooking. Whole Foods and other health food stores sell legumes and grains in bulk, which makes them so much cheaper (and uses less packaging!) than at regular grocery stores.

3. Try quinoa and tempeh. Quinoa (pronounced keen-wah) is a South American seed that is packed with protein and fiber and actually has an almost perfect balance of all 8 amino acids needed by the body. Tempeh is a type of fermented soy product native to Indonesia and contains a ton of protein and fiber. The fermentation process provides healthy probiotics to the digestive system. I like to crumble it, sauté it, and add it to meatless spaghetti sauce to add protein and texture to a very inexpensive meal.

3. Eat eggs for protein. Find local eggs from a farmer you can trust, if possible. I know for most people this may not be possible. So-called "free range" hens are still packed tightly inside, with a tiny door that may open for 15 minutes per day. Chickens technically have access to the outdoors but aren't pecking around a farm-yard! We make scrambled egg and salsa burritos, quiche, fried rice, and other egg dishes for dinner.

4. Buy less junk food. We save money by drinking mainly water and avoid the empty calories (and plastic waste) of sodas, juice drinks, etc. By eating real and healthful food we stay full longer and need junk food less.

5. Be content with having less. Read this blog about a girl who dropped out of college and moved to Africa to take care of orphans. Reading some of these stories has really put my perceived needs into perspective. Right now I really, really want to buy just one Yankee Candle that smells like fall. It would cost about $10. But I'm not going to buy one. A friend of mine just bought these amazing BCBG boots at a discount store for $60. A great price for some sweet boots. But I am not going to buy a pair. I drive a 1992 Toyota Corolla and my winter coat is a hand-me-down from my best friend from circa the late-nineties. But I have food and clean water, access to health care, and a roof over my head. Compared to most people in the world I live like a queen. Cultivate thankfulness for what you have and just don't buy new things! The lattes and candles and lipsticks add up!

6. Be content with doing less. We basically don't go out to eat. We don't go to movies or concerts. This one is hard. Our friends go out to eat every Sunday after church. We never go. We go home and eat beans and rice. But we have people over to play cards, we play frisbee, and have cook-outs and enjoy socializing in ways that don't cost an arm and a leg. For our first wedding anniversary we made a pizza at our home and gave each other handmade gifts.

7. Get a job on the side. I work full time and baby-sit or do catering jobs on the weekend. It really, really stinks. It is not fun. But it is fun seeing our debt slide off faster and knowing that we are this much closer to being debt-free.

8. Re-think beauty. This one is hard. I used to buy this great hair stuff from Aveda to give my poor, plain hair some volume. Not necessary. Most make-up I have found is not necessary. The natural look is so in, anyway! I actually have given up commercial shampoo and conditioner. I now use liquid castile soap, apple cider vinegar, and warm oil to wash and condition my hair. This routine is SO inexpensive, works great, uses less plastic, and results in less chemicals down the drain. You can still look beautiful without spending a ton of money!

9. Re-think clean. I think for cleaning house you might be able to do everything with some Basic H and white vinegar. A 16 oz bottle of Basic H2 creates 48 gallons of cleaning solution. It costs about $12. And it’s biodegradable. Less products in your closet, less plastic, less money, less harmful junk down the drains.

10. Re-use. We used my old twin bed as our living room sofa for almost a year (until a friend gave us an old love seat for free). We got a coffee table, chairs, and shelves for free. This also goes for smaller items-- I wash and re-use ziplock bags, and we save spaghetti sauce jars to drink out of. Re-using items (from plastic bags to sofas) slows the rate at which we deplete resources and fill landfills!

Getting out of debt takes some really big steps (like selling a car or working two jobs) but mostly it is a slow process. This process isn't flashy, and it requires daily sacrifice. Eating beans and rice again. Not buying new shoes. Not going out to eat with our friends. But I think we are becoming better people in the process-- more patient, more joyful, less materialistic. Caring less what other people think and caring more for the world. I can't wait to get out of debt, but I think that once we are debt free I will continue to live much the same way.

Personal Grocery Shopper

I am sure that I am not the only mother out there who wished that there was some way to make money while still staying home with the kids. I have searched and tried so many things. Some that have worked and some that have not. Today I am starting what I hope will become a weekly feature on income earning opportunities that can be done either from your home, with kids in tow, or as your own business.

Today's income earning idea is to become a personal grocery shopper. I have actually considered doing this one myself many times. In fact I asked several friends what they thought of the idea and had a very positive response.

There are so many people out there who could use help getting their groceries...

Elderly
Home bound
Working professionals
Working moms
Those who have recently had surgery
The list could go on and on

Here are a couple of places that you could possibly advertise...

Country clubs
Doctors offices
Grocery stores
Office buildings

Some of the ideas that I have had to help stream line this business would be...

Ask each client to provide a pre-paid visa or store gift card so that you are not having to pay anything out of your pocket.
Get different colored shopping bags so that each client could have their own color and tag them so that you can easily make deliveries.
Get a professional catering cooler so that you are able to keep cold things cold and hot items hot. This would be extremely important. Nobody wants to receive melted ice cream.
Make up a flyer highlighting what you do, your prices, and the reason why having a personal grocery shopper may benefit the individual. Don't forget your business cards. Vistaprint often has offers for free business cards.

Due to my little ones having coughs right now I have been looking for something to help them feel better that is not full of chemicals. I have tried straight honey in the past with some success, but I decided to give Jack some Zarbees cough syrup this morning and it really did help.

I love the fact that Zarbees is completely natural with the main ingredient being honey. This syrup comes in lemon and cherry flavors. I am curious to know how much raw milk costs in different parts of the country. How much do you pay for a gallon of raw milk? I have to say that I am very blessed to only pay $2.50 per gallon from a local farm! That is less then conventional. The only problem is I have to drive about 45 minutes to get it, but for that price I can't complain.

Charlotte has been wanting to nurse all night so sleep is hard to come by. Any spare time has been spent getting caught up on house work or taking care of kids. Coupons Are Only For Junk Food

I have been wanting to get back on track and write up some good posts about natural living rather then just posting about the best deals and coupons, but I have just not had time lately. Here is a repost of something I wrote posted last summer.

If I had read the title of this post 2 years ago I would have completely agreed, and for the most part I still do. That said I would like to show you that there are some coupons out there that can be used for organic or natural foods. I still think that buying organic ingredients and making your own food is definitely cheaper, but not everyone is able to spend time in the kitchen cooking every meal. Later this week I will try and post some recipes that use whole foods that are frugal and easy to prepare.

I am always on the lookout for organic coupons. I seem to find them everywhere. If you have a health food store anywhere near you make sure to check them out. They often have coupons in their magazines or in my case a whole book of coupons that comes out every couple of months. I always grab several. The nice thing is that the coupons are for REAL food like butter, milk, veggies... A couple of weeks ago I was able to get 2 bags of organic carrots for $.99! I have also been able to get Cascadian Farms fruits and veggies for $.50 a bag buy combining coupons and sales.

Make sure to keep an eye out in your local grocery store as well. In either March or April of last year they had coupon books for Earth Day. These came in very handy. I always check to see what items might be on closeout in the health food section and then see if I have coupons for them.

If you remember to buy your produce in season you are usually able to get organic items for the same price or less then conventional. Here is a good list of seasonal produce in your area. Also see if you can buy locally at a farmers market. Or better yet grow your own. Even if you only have room for a container garden you can grow fruits and veggies.

If you have noticed from some of my shopping trip pictures I rarely buy cleaning products or processed foods. I will admit that I cave and buy a few junk food products when a craving hits or I can get something for free. These items are either saved as treats for my kids or donated to my church's food pantry. Sometime I feel bad donating food that I prefer not to feed my family, but I also want to help as much as my budget will allow. I would hope that if I ever were in a position to need help that someone would help me. When I do donate I try to make sure the food is at least somewhat healthy.

If you are looking for coupons for "real" food there are numerous sites that you can go to. Often if you will go to a manufacturers web site they will offer you a coupon. For example Seventh Generation and Muir Glen tomatoes.
